The Caol Ila 8-Year-Old Feis Ìle 2025 edition is a bold, limited release that pushes the boundaries of maturation by finishing in rare Colombian Oak casks—Quercus Humboldtii from the Andes. Aged for 1.5 years in these medium-toasted barrels after initial maturation in butts and hogsheads, the whisky showcases a unique harmony of floral and sweet chocolate aromas layered over Caol Ila’s signature coastal peat smoke. This experimental wood, with its low tannin content and tight grain, imparts a balanced, nuanced profile in a release limited to just six casks—about 1,680 bottles total.
Subtle yet complex, opening with clean dairy notes, chalky minerals, and a bracing sea breeze. A touch of water reveals richer layers—sweet butter, floral honey, chocolatey warmth, and a delicate thread of peat smoke.
Medium to full-bodied with a smooth, lightly oily texture that carries flavour with confidence.
