The Sweet Peat Tea is an elegant whisky cocktail that brings together the smoky depth of Lagavulin 11 Year Old Sweet Peat with subtle sweetness and aromatic spice. In this serve, rich Islay peat is balanced by honey-ginger syrup, while a measure of strong black tea adds gentle tannin and structure.

  • Cocktail strainer

Bartender tip: Brew the black tea slightly stronger than you would for drinking and allow it to cool fully before mixing. This ensures the tea’s tannins and flavour remain noticeable alongside the smoky whisky without diluting the cocktail.

Method
STEP 01
Syrup
To make the honey-ginger syrup, add 200ml/7oz runny honey, 200ml/7oz water and 75g fresh ginger to a saucepan and heat. Gently simmer for 15-20 minutes, then strain and cool. It can be stored in the fridge for 2 weeks

Pour
Add all ingredients to a cocktail shaker with ice
STEP 03
Shake
Shake gently to chill and aerate
STEP 4
Strain
Strain into a coupe glass and garnish with a spiral lemon peel
